Asparagus with Almonds and Burrata


Looking for an easy way to jazz up your asparagus? Try this easy veggie side dish! Asparagus with Almonds and Burrata is sure to impress your guests.

I absolutely love grilled asparagus. It’s just so easy and delicious. Here I’ve added a bit of torn burrata, slivered almonds, a drizzle of olive oil, and a dash of paprika for a side that takes just minutes to make.

Burrata cheese is perfect to use here because it oozes all over the asparagus. (If you substitute mozzarella, you won’t have the same result.) I used one mini burrata ball for one bunch of asparagus here, so a standard burrata ball would easily be enough for two asparagus bunches.

Asparagus with Almonds and Burrata

2 bunches asparagus
Extra virgin olive oil
Sea salt, black pepper
Burrata ball
2 Tbsp slivered almonds
Paprika

  1. Preheat grill to about 350 degrees.
  2. Snap ends off of asparagus. Toss with extra virgin olive oil, sea salt, and black pepper.
  3. Depending on thickness of asparagus, grill for 2-5 minutes, until the spears are slightly charred and bend a bit when you pick them up.
  4. Transfer asparagus to a serving dish. Tear burrata into pieces, letting it ooze all over the asparagus. Drizzle with a bit more olive oil, sprinkle with slivered almonds and a dash of paprika.
